■Specialty: Snow crab with ponzu jelly (salmon roe, ponzu jelly, scallions, cherry tomatoes)

Today's dish: Kagen Matsutake mushroom dashi shabu-shabu (matsutake mushroom, sudachi orange, shredded leeks)

Tempura: spiny lobster, swordfish, sweet potato (five-color salt)

■Meat dish: Charcoal grilled Wagyu sirloin with Kinzanji miso sauce

(Lemon, wasabi, fried garlic, homemade potato salad, special miso sauce)

■ Soup dish: Clam clear soup (clams, green onions, lemon)

■ Final dish: Japanese beef and matsutake mushroom rice in a clay pot (matsutake mushroom and mitsuba)
